Gluten-free fudge cake
Who doesn’t love a creamy and mouthwatering chocolate treat? This cake will become your favorite chocolate dessert!
Serves: 8 slices
For the cake…
- 1¾ cups gluten-free flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 3 eggs, lightly beaten
- 2 cups sugar
- ¾ cup cocoa powder
- 1 teaspoon sea salt
- 1 cup whole milk (or the milk substitute of your choice)
- ½ cup vegetable oil
- 2 teaspoons gluten-free vanilla extract
- 1 cup hot coffee
For the creamy frosting…
- ½ cup butter, melted and cooled slightly
- ⅔ cup cocoa powder
- 3 cups powdered sugar, sifted
- ⅓ cup whole milk (or the milk substitute of your choice)
- 1 teaspoon gluten-free vanilla extract
- A pinch of salt
-Preheat oven to 350 degrees F.
-Grease two 8-inch cake pans. Be sure to use gluten-free cooking spray. Set aside.
-Whisk to combine the sugar, flour, cocoa powder, baking powder, baking soda, and salt in a large mixing bowl. Afterwards, add the eggs, milk, oil and vanilla; beat until smooth.
-Carefully whisk in the hot coffee.
-Distribute evenly the cake batter between the two pans and bake for around 30-35 minutes. Let it cool in the pans for 5 minutes and then take it out and place it on a plate to finish cooling.
-To make the frosting: whisk the melted butter into the cocoa powder until thoroughly combined. Alternate adding the sugar with the milk while beating until the frosting is smooth and glossy and a spreadable consistency. If the frosting is too thick, add more milk. If it seems too thin, add powdered sugar. Beat in the vanilla extract and salt.
-Frost the cooled cakes as desired.
Gluten-free banana bread
An easy banana bread all your family will love! Perfect for Christmas holidays or to get cozy at home with a cup of coffee or hot coco.
Serves: 1 loaf, around 12 slices
- 2 cups gluten-free flour
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp ground cinnamon
- ¼ tsp salt
- ½ tbsp unsalted butter (or coconut oil), melted and cooled slightly
- 2 egg whites
- 1 ½ tsp vanilla extract
- ¼ cup plain Greek yogurt
- ¾ cup mashed banana
- 2 tbsp maple syrup
- 6 tbsp milk
- 1 ½ cups grated carrot
- ¾ cup apple (finely diced)
- ¼ cup raisins
- 2 tbsp pecans (finely diced)
- 2 tbsp shredded coconut
-Preheat oven to 350 F.
-Lightly coat a loaf pan with nonstick cooking spray.
-In a medium bowl, whisk together the flour, cinnamon, baking powder, baking soda and salt.
-In a separate bowl, whisk together the butter, eggs, and vanilla. Mix in the Greek yogurt, stirring until no large lumps remain. Mix in the mashed banana and maple syrup. Alternate between adding the flour mixture and milk, beginning and ending with the flour mixture, and stirring just until incorporated. Gently add the carrots, apple, raisins, pecans, and coconut.
-Spread the batter into the prepared pan. Bake at 350°F for around 50 minutes.
-Cool in the pan for 10 minutes, and then take it out and place it on a plate to finish cooling.
Gluten-free apple crisp
Apples are one of the best fruits out there. You can find them all year long, they are tasty and are great for homemade desserts! Like this one.
For the baked apples…
- 12 cups peeled, sliced apples
- 1/2 tsp cinnamon
- 2 tbsp lemon juice
- 1 tbsp water
For the topping…
- 1 1/2 cups brown sugar
- 1 cup gluten-free flour
- 1 cup gluten-free old-fashioned oats
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/8 tsp salt
- 3/4 cup unsalted butter
-Preheat oven to 375 degrees F.
-Peel and slice the apples (thick slices).
-In a large bowl, stir together sliced apples, 1/2 tsp cinnamon, lemon juice and water. Scoop into a baking pan.
-In a medium bowl, whisk together all topping ingredients, except butter. Use a pastry cutter or two knives to cut in butter until mixture is crumbly. Sprinkle over apples.
-Bake at 375 degrees F for 45 minutes or until apples are tender and topping is crisp and browned.
-Serve warm and enjoy!
